Chef Glen Ballis is an internationally celebrated chef and visionary whose career spans over four decades across Australia, Asia, Europe and The Middle East. Known for his instinctive, produce-led approach, Glen has shaped more than 50 original dining concepts worldwide, each rooted in authenticity and creativity.
Trained at the esteemed William Angliss Hospitality School in Australia, Glen began his journey inspired by his family’s culinary artistry. His path has since led him through leading roles with Banyan Tree Resorts, Shangri-La Hotels and numerous acclaimed establishments, earning him recognition as one of the industry’s most influential chefs.
Daniel Ballis is an accomplished hospitality operator with over 18 years of experience in high-end restaurants, bars, and multi-outlet operations across the UAE, Singapore, and Australia. A graduate of the Blue Mountains International Hotel Management School, his career began with management roles at Four Seasons Hotels.
Renowned for concept creation, brand development, and delivering award-winning ventures recognized by Michelin and "50 Best," Daniel specializes in pre-openings and project management. He boasts a proven track record in optimizing operations, cultivating innovative F&B experiences, and consistently driving strong financial returns. His expertise spans multi-site management, marketing strategy, and financial planning, establishing him as a formidable professional in the luxury hospitality sector.
The Father and Son team opened INA Modern Grill together with Fundamental Hospitality at J1 Beach, Dubai in April 2025. A produce led grill that celebrates the elemental art of open-fire cooking.
